Skillet Bolognese Lasagna

A one-pan weeknight dinner that’s a nutritional powerhouse! Packed full of veggies, protein, and flavor—plus, you probably already have most of the ingredients on hand!

Ingredients

  • 1 lb lean ground beef or turkey
  • 2 celery stalks
  • 2 medium carrots
  • ½ medium onion
  • 1 zucchini, chopped
  • 4–5 oz mushrooms, sliced (optional)
  • 3 cloves garlic, crushed
  • 1 jar of your favorite marinara sauce
  • (Rao’s or Thrive Market Roasted Garlic are great choices)
  • 1 can diced tomatoes
  • 1 tbsp balsamic vinegar
  • 2 cups baby spinach
  • 8 oz pasta of choice (broken lasagna noodles work great)
  • ½ cup low-fat ricotta or cottage cheese (based on your protein needs)
  • 2 oz Parmesan cheese
  • 1 tbsp chimichurri sauce or pesto (or fresh basil)
  • ½ cup part-skim mozzarella cheese

Instructions

1.Sauté the Veggies
  • Heat oil in a large skillet (cast iron works best) over medium-high heat.
  • Add chopped onion; sauté until translucent.
  • Add mushrooms and zucchini; cook until softened.
  • Stir in crushed garlic and season with salt and pepper.
2.Cook the Meat
  • Push the veggies to one side of the skillet.
  • Add ground meat and brown it, breaking it up as it cooks.
  • Season with Italian seasoning, garlic powder, onion powder, and red pepper flakes.
3.Boil the Pasta
  • While the meat cooks, boil your pasta in a separate pot.
  • Cook until al dente, then drain.
4.Add the Sauce
  • Once meat is browned, stir in marinara sauce, diced tomatoes, and balsamic vinegar.
  • Reduce heat and let simmer.
5.Cheese Mixture
  • In a small bowl, mix together the cottage (or ricotta) cheese, Parmesan, and chimichurri (or pesto/fresh basil).
6.Combine Everything
  • Add spinach to the skillet and stir until wilted.
  • Add cooked pasta to the skillet and mix until everything is well-coated in the sauce.
7.Top with Cheese & Melt
  • Dollop the cheese mixture over the pasta.
  • Sprinkle with mozzarella.
  • Cover the skillet with a lid and let the cheese melt.
8.Garnish & Serve
  • Sprinkle with red pepper flakes and fresh basil.
  • Serve hot and enjoy!
